Bright beetroot butterbean dip

It’s cold and rainy outside (well it certainly is here in Manchester!) so here’s something quick, easy, healthy and wonderfully colourful to brighten up your day.

This is the first of several dishes that we photographed on a wintry day a few weekends ago and the combination just came to me the day before and I knew I had to give it a go. It tastes very similar to hummus but with a sweet kick and it’s smoother. Don’t let the pinkness put you off, it’s truly delicious and only takes a few minutes to make!

Ingredients:
1/2 cooked beetroot
1 small garlic clove
1 x 400g can butterbeans
4 tbsp extra virgin olive oil
Juice of 1/2 lemon
Large pinch salt

There’s not much to it, simply blend all of the ingredients together and add more salt, lemon or olive oil according to taste. It should come out ridiculously bright pink and super thick and sweet, that should make any rainy day a bit better!
