My 5 minute gazpacho 

This weekend we’ve had one last taste of summer, in more than one way.

When the sun in shining and I have a fridge filled with fresh fruit and veg, there’s nothing I want more that a fresh gazpacho.

Here’s my own recipe, it makes enough for one large serving, perfect for when you fancy a little of something fresh for a hot day.

Ingredients:
8 sweet cherry tomatoes
1/2 cucumber
1 sweet pointed red pepper
1/2 red onion
2 small garlic cloves
2 tbsp breadcrumbs
Splash of extra virgin olive oil
Salt
Red wine vinegar

1. Roughly chop all of the ingredients.

2. Blend all the ingredients (save about 1/4 of the veg) at top whack, adjust and add more of each of the ingredients depending on how you like it and blend until you have a thin soup consistency.

3. I like to keep some of the veg aside and add that last and blend it roughly so the soup still had some crunch.

4. Pour into a bowl and finish with a drizzle of extra virgin olive oil and a handful of jamon pieces if you can get it!

If you want it really cold just add an ice one to the blender too and add a little more salt.

Tastes like sitting by a pool in southern Spain!
